Add Butter: Use a pastry blender or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Add Water: Gradually add the ice-cold water, stirring with a fork until the dough comes together in a ball.
Chill the Dough: Shape the dough into a disc, enclose it securely in plastic wrap, and place it in the refrigerator for a minimum of 30 minutes to chill.
Roll Out the Dough: On a lightly floured surface, roll out the dough to about 1/8 inch thickness.
Cut Out Shells: Use a cookie cutter or the rim of a glass to cut out circles of dough.
Shape Shells: Press each circle into a mini muffin tin to form shells.
Bake: Preheat your oven to 375°F (190°C). Bake the shells for about 15-20 minutes, or until lightly golden.
