Ingredients
  

4 soft bread rolls (preferably Rundstück or Kaiser rolls)

4 soused herring fillets (matjes)

1 small red onion, thinly sliced

8 cornichons, thinly sliced

Freshly ground black pepper, to taste

Lemon wedges, for serving

Instructions
 

  • 1- Prepare the Bread: Slice the bread rolls in half or keep whole, depending on your preference. Optionally, lightly toast or warm them for added texture.
  • 2- Prepare the Herring: Rinse and dry the soused herring fillets. Place one fillet on each bread roll.
  • 3- Garnish the Sandwich: Add a few thin slices of red onion and cornichons on top of the herring.
  • 4- Season: Sprinkle freshly ground black pepper on top to taste.
  • 5- Serve: Squeeze a fresh lemon wedge over the sandwich just before eating. Enjoy immediately!
