Ingredients
  

  • can 15 oz pure pumpkin puree
  • 1 can 12 oz evaporated milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pumpkin pie spice
  • 1 box 15.25 oz yellow cake mix
  • 3/4 cup 1½ sticks unsalted butter, melted

Method
 

  1. Preheat oven: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish or leave ungreased.
  2. Mix pumpkin layer: In the baking dish, combine pumpkin puree, evaporated milk, sugar, and pumpkin pie spice. Whisk until smooth and well combined.
  3. Add cake mix: Evenly sprinkle the dry cake mix over the pumpkin mixture, covering the entire surface. Use a spoon to distribute it if needed.
  4. Drizzle butter: Pour the melted butter evenly over the cake mix, making sure to cover all areas, especially the edges.
  5. Bake: Bake for 50-60 minutes, until the top is golden brown and set. The edges should be bubbly and the cake layer should have a crispy crust.
  6. Cool and serve: Let cool for 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

  • Don't substitute regular milk for evaporated milk—it won't have the same creamy texture.
  • Make it gluten-free: Simply use a gluten-free yellow cake mix.
  • Storage: Cover and refrigerate leftovers for up to 4 days. Reheat individual portions in the microwave for 20-30 seconds.
  • Make-ahead tip: Prepare the pumpkin layer the night before and refrigerate. Add cake mix and butter just before baking.
  • Pumpkin pie spice substitute: Use 2 teaspoons cinnamon, 1 teaspoon ginger, 1/2 teaspoon nutmeg, and 1/4 teaspoon cloves.
