2 lbs russet or Yukon Gold potatoes, peeled and sliced

1 lb smoked sausage (e.g., Andouille or Kielbasa), sliced

1 large onion, thinly sliced

1 bell pepper (optional), sliced

2 cloves garlic, minced

1 cup chicken broth

2 tbsp olive oil or butter

1 tsp garlic powder

Salt and pepper to taste

Chopped parsley for garnish (optional)

    Sauté Sausage:

      In a large skillet over medium heat, add 1 tablespoon of olive oil. Add sliced sausage and cook until browned. Remove and set aside.

        Cook Vegetables:

          In the same skillet, add remaining olive oil. Sauté onions and bell peppers until softened, about 5 minutes. Add minced garlic and cook for an additional minute.

            Add Potatoes:

              Add sliced potatoes to the skillet. Season with garlic powder, salt, and pepper. Stir to combine with the vegetables.

                Deglaze and Simmer:

                  Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Return the browned sausage to the skillet. Cover and simmer over low heat for 25-30 minutes, or until potatoes are tender.

                    Garnish and Serve:

                      Once cooked, garnish with chopped parsley if desired. Serve hot.
