Ingredients

1 pound ground turkey
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 cup fresh or frozen cranberries
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, chopped green onions

Method

In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.
Add ground turkey to the pot, breaking it apart with a spoon. Cook until browned.
Stir in diced tomatoes, kidney beans, and cranberries.
Add chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for 30-45 minutes, allowing flavors to meld and cranberries to burst.
Serve hot, garnished with your choice of toppings.
